Monday: Tacos.

Usually Tuesday night is kids’ choice, but I thought I’d get crazy this week and make Pete’s pick on Monday instead. His first choice was “ummmm, let’s go to Moe’s,” but I talked him into tacos at home instead.

Tuesday: Pineapple black bean enchiladas.

Wednesday: Breakfast for dinner.

Thursday: Fish sticks po’ boys

We used to make these all the time, and then I got tired of them. Rockford has requested they make a comeback, though, so here they are.

Friday: Pizza.

  1. How do you make the pineapple black bean enchilladas? I got lots of garden produce from my mom over the weekend so we are having cucumber salad and BLTs tonight.
