The trouble with lunch

Back when I was a worker bee, I ate a lot of frozen-food lunches. I stopped doing that when I started staying home, because a sandwich costs less and I could make them fresh.

That worked fine for quite awhile. But then I started getting a headache toward the end of the day and realizing that, hey! I forgot to eat lunch again. So I started buying the frozens again a few weeks ago. For some reason, it’s easier for me to remember to eat when I have to microwave something. Probably because it’s hard to maintain one’s enthusiasm about PB&J after the 312th consecutive day of them.

Naturally, though, I have a problem with frozen lunches, too. The meat in a frozen meal? I can’t handle it. It makes me a little queasy just to think about it, much less eat it. So I limit myself to the vegetarian options most of the time.

And there aren’t scads of them to choose from. But here are a few of my favorites:

  • Amy’s has a great array of vegetarian options, such as mattar paneer and cheese enchiladas. The brand is one of the more expensive ones, though. Fortunately, our local organic discount emporium has them pretty regularly.
  • Ethnic Gourmet’s Gujarati Vegetable Curry
  • Lean Cuisine’s butternut squash ravioli is delightful.

    This was a very rambley way of saying that frozen lunches work for me. What’s your go-to lunch?

    1. I typically buy a pound of lunch meat, some cheese, and a big French Bread. Make the whole huge hoogie on Monday morning, then me and my hubs cut chunks off it all week for lunch. I’m into making lunch once and week and eating lunch everyday.

    2. I like DesignHER Momma’s idea! I’m going to give that a try at work one week when I’m feeling particularly ‘sandwichy.’

      I also like to take one or two servings of various things I cook and put it in a microwavable container and freeze it for those days I’m on the run or nothing easy sounds good…or I’m just feeling plain lazy.

      And I understand how you can forget lunch from time to time! I do it at work all the time!

    3. My newest lunch plan is to make vegetarian chili once a week and partition it into containers, one of which I take to work with me each day. I also keep crackers of various delicious and hearty varieties in my desk to go with the chili. The greatest thing about vegetarian chili is that it’s made up entirely of pantry items (except for the chopped onion), and its flavors get better as time goes on.

    4. Thanks for this, Nichole. I needed some suggestions. Lunch is an ick for me, especially in the winter because a cold meat sandwich is just not yummy. I just tried the Hormel Compleats the other day; they aren’t frozen but the Chicken and Rice is actually pretty good. Hope it’s really chicken 🙂
