Honey dinner!
Honey-mustard roasted potatoes
recipe adapted from the National Honey Board
1 lb new red potatoes
1/4 cup Dijon mustard
1/8 cup honey
salt and pepper to tasteWash potatoes and cut each into 4 to 6 pieces; set aside. Whisk together mustard, honey, salt and pepper in a small bowl. In a large bowl, toss potatoes with honey mustard until coated evenly. Arrange potatoes on a foil-lined baking sheet sprayed with cooking spray. Bake at 400 degrees for 40 to 45 minutes or until potatoes begin to brown around the edges, stirring potatoes once or twice during cooking.
