Yesterday afternoon I started to feel like I’d been hit by a truck. By the end of the day, I felt like it had backed up and run me over again. And again and again. (Thanks, allergies/horrible sinuses!)
It wasn’t the loveliest of Mother’s Days.
There is relief on the horizon, though. My mom was going to spend a few days with us later this week, and she’s decided to come early to help me out while I convalesce. Yay for moms!
Speaking of Mom, here’s my plan for what she’ll be making for dinner this week.*
- Monday: Breakfast for dinner.
- This is usually eggs and veggie sausages.
- Tuesday: Black bean taquitos.
- This is the first recipe we’re trying from Relish.
- Wednesday: Chicken strips and mashed potatoes.
- This was my favorite Mom-made meal growing up.
- Thursday: Bean and kale soup.
- I’ve never had kale before, and I wasn’t sure what it looked like. It’s frilly!
- Friday: Pizza
*I’m really hoping to be better sometime soon, so maybe she won’t feel like she needs to make all the meals.

Will those be leftover black beans?
Also, I really like kale. I like to make it the same way I make collards: saute some garlic and onion on olive oil, toss in greens and a little water, cover and steam. yum!
