Monday: Creamy Corn Soup.
This will be the first recipe I’ve tried from “Mexican Everyday” by Rick Bayless. I love Mexican food, but my culinary repertoire doesn’t contain much beyond enchiladas and tacos. I’m hoping “Mexican Everyday” might help change that!
Tuesday: Cheesy curried chicken.
Between a doctors appointment for me, a “class” at the arboretum for Poppy and a visit from the in-laws, Tuesday is shaping up to be a busy day. (Admittedly, my busy days aren’t as busy as some people’s relaxing days.) Fortunately, this recipe converted to the Crockpot very well.
Wednesday: Chicken nuggets with mac ‘n’ cheese.
Rockford won’t be home for dinner, so Poppy and I are going to have an easy, Pi-friendly dinner.
Thursday: Fish stick po’ boys.
Quick, easy and yummy. What’s not to love?
Friday: Pizza.
We’ve ordered pizza for the last couple of Fridays, but we’ll be making our own this week. Pepperoni, pineapple and “Friday Night Lights.” A winning combination.
