I spent a good amount of the weekend making a Samoa Cheesecake from GimmeSomeOven.com for last night’s dessert, and it was delicious. We also did a bit of gardening, folded a lot of laundry and dragged random piles of brush to and fro in the yard. As such, I’m sore today and should probably start doing yoga and stretching before I drag brush piles around again.
Anywho: Here’s what we’re having for dinner this week.
- Monday: “Take-Out style Sesame Noodles“
- Rockford requested these again, and I’m happy to oblige. I ate the leftovers for lunch for days and days the last time we had them. I’m adding some shaved carrots and minced bell pepper this time.
Tuesday: Chicken sausages & mac ‘n’ cheese I made a hundred million pounds of macaroni and cheese to go with our Easter dinner yesterday, and we still have about 999,000 pounds of it left. The chicken sausages will serve as a lovely accoutrement to the piles of mac & cheese we’ll be eating tomorrow.
- Wednesday: Fish
- Note to self: Go buy some delightfully seasoned frozen fish.
- Thursday: Sloppy Joes
- I also made too much Sloppy Joe the last time we had it. I’ll be pulling the extra from the freezer for Thursday night.
- Friday: Pizza
- Oh yes it’s pizza night! Oh what a night. (Oh what a night.)

I made a cheesecake too this weekend and did LOTS of laundry! No gardening though unless you count hiding Easter eggs in the garden;)
