Poppy and I decided to make some cupcakes yesterday, and nearly everything that could’ve gone wrong with them did. The batter poured out of the overfilled cups, resulting in slightly overbaked Jabba the Cupcakes. I pulled off the Jabba bits as best as I could, figuring I could cover the disfigurement with frosting.
Then I tried to make some buttercream, and it was a mess. It didn’t get thick and creamy at all, and there were little specks of butter throughout. I started to throw the whole mess away.
And then it came to me: Bakerella’s cupcake pops!
This probably ought to be called a Would Work for Me If I’d Do It post, because I haven’t actually constructed any cupcake pops yet. But I do have a bowl full of cakeyfrosting in the fridge. It’s a start.

I love Bakerella!!! I did the red velvet cake balls for Christmas…I wasn’t so ambitious as to put them in pop form but more power to you!!!
I hadn’t seen those as pops, but there are a lot of people in blogland saying that cake balls are the best thing since sliced bread. You could also make a trifle with the cupcakes (add pudding and fruit) or parfaits.

Hubbie tends to over flow the waffle maker on the weekends. Now we have a name for it. Jabba the Waffle. Love it.
