Monday: Hot dogs.

We’d planned to have a cook out with some friends, but they woke up sick this morning. Also: It’s raining. But the umbrella and I went out there and grilled some hot dogs anyway.

Tuesday: Chicken strips and mashed potatoes.

My mom made this for us when she was visiting a few weeks ago, and Poppy asked if we could have it again.

Wednesday: Pork meatball banh mi.

I’ve had these on my to-make list for awhile. I’m hoping they live up to my expectations.

Thursday: Edamame noodle bowls.

Friday: Pizza

Mom to the rescue

Yesterday afternoon I started to feel like I’d been hit by a truck. By the end of the day, I felt like it had backed up and run me over again. And again and again. (Thanks, allergies/horrible sinuses!)

It wasn’t the loveliest of Mother’s Days.

There is relief on the horizon, though. My mom was going to spend a few days with us later this week, and she’s decided to come early to help me out while I convalesce. Yay for moms!

Speaking of Mom, here’s my plan for what she’ll be making for dinner this week.*

Monday: Breakfast for dinner.

This is usually eggs and veggie sausages.

Tuesday: Black bean taquitos.

This is the first recipe we’re trying from Relish.

Wednesday: Chicken strips and mashed potatoes.

This was my favorite Mom-made meal growing up.

Thursday: Bean and kale soup.

I’ve never had kale before, and I wasn’t sure what it looked like. It’s frilly!

Friday: Pizza

*I’m really hoping to be better sometime soon, so maybe she won’t feel like she needs to make all the meals.

This week, it’s a frozen pizza!

Monday: Chicken meatballs.

We’re going to have these on pita bread with tzatziki sauce. I’m really glad I didn’t have to say that to you, because I have no idea how to pronounce it.

Tuesday: Bangers & mash.

Petey loved this so much when we had it on St. Patrick’s Day. It’s also exceptionally simple. Win and win.

Wednesday: Mac & cheese & peas.

The peas are added on an as-needed basis. That is to say, I add them to Pete’s after it’s in his bowl, so that nary a vegetable touches Poppy’s food.

Thursday: Breakfast for dinner.

Either omelets or scrambled eggs with veggie sausages.

Friday: Pizza

I’m beginning to wonder whether we’ll have a week without macaroni & cheese and/or pizza.
