- It’s the homeschool co-op’s demo night. I made killer quinoa salad.
- Tuesday: Grilled ham & cheese sandwiches
- One of us will be having a plain ol’ grilled cheese. Betcha can’t guess who!
- Wednesday: Pancakes & veggie sausages
- It was Poppy’s turn to pick the kids’ choice meal.
- Thursday: Bean & rice burritos
- Very simple, and it’s one of Pete’s favorites.
- Friday: Pizza
- A local spot near us has been sending us lots of coupons lately, so we’ll probably try them this week.

I hope ribs are on my dad’s menu plan this week
Today is my dad’s birthday. If I were making this week’s menu in his honor, we’d be having ribs on Monday, ribs on Tuesday, scallops on Wednesday, ribs on Thursday and scallops and ribs on Friday. I couldn’t make the menu plan in his honor, though, because I can’t afford to eat ribs and scallops every day.
Pete tried to get me to save a piece of cake for his Papa until Christmas, but I think I’ll just eat it on his behalf instead.
Sorry, Dad, and happy birthday! We all love you tremendously.
- Monday: Baked ravioli
- Poppy eats it, and happily. It’s becoming a mainstay.
- Tuesday: McAlister’s Deli
- McAlister’s sent me a birthday coupon for $5 off, and it’s kids night! I’ll probably have the grilled cheese sandwich and a Chef’s salad.
- Wednesday: Cracker Barrel chicken, macaroni & cheese and peas
- Wednesday is Pete’s birthday, so he chose the menu. He plans to mix his peas into his mac & cheese.
- Thursday: Taco salad
- This one was Rockford’s choice.
- Friday: Pizza
- I might make it myself this week. (But I might not.)
On Sunday I was a hermit
I didn’t leave the house at all yesterday (nor did I take any pictures), so I don’t have all that much to report.
I got up and got ready for church in the morning, then decided to just keep my cold at home. Rockford took the kids to church, and I did a little laundry, watched several “Good Eats” re-runs and napped until they came home.
After church Poppy spent a good part of the afternoon out with Rockford’s mom, and Pete took a super long nap — I’m hoping that isn’t a sign that he’s going to be coming down with my cold — while Rockford worked on a presentation he has to do tomorrow. Meanwhile, I napped some more, watched “Thor” and started dinner.
The kids had been invited to some friends’ house to decorate Halloween cookies, so Rockford took them over there after dinner. If I were to wager a guess, I’d say he watched football while the kids decorated cookies. Surprisingly, I did not take a nap while they were gone.
Rockford has a lot of dinners out this week, and our menu plan for the week reflects that. In that it’s mostly kid-friendly standby meals.
- Monday: Spaghetti
- With Texas toast! I like Texas toast.
- Tuesday: Fish sticks and mac & cheese
- This is not one of my favorite meals. I’ll probably have an Amy’s vegetable pot pie from the freezer.
- Wednesday: Chili
- We trick or treat and have dinner with friends every year on Halloween. I’m 99 percent sure we’re having chili this year.
- Thursday: Omelets
- Poppy loves eggs, and she loves cheese. So why won’t see even try an omelet? I don’t know, but chances are I’ll be making fried eggs on Thursday, too.
- Friday: Pizza
- I’m already looking forward to Friday.
