Menu Plan Monday and the return of the Sloppy Joe

On Friday some friends came over and we listened to Dean Martin and his ilk (thanks Pandora) and talked about our day and ate spaghetti and meatballs, warm bread, fancy salad and a variety of fudge on the back porch — by candlelight because we discovered belatedly that the lightbulbs outside had all gone out. The kids ran around until it got so dark that we couldn’t see them, and then they ran around for awhile longer before we sent them inside. Our first Friday Night Meatball dinner was lovely. I’m already looking forward to the next one.

The rest of the weekend featured a couple of soccer games, more beautiful weather, some planning for today’s co-op class and a couple of trips to Target. Not so shabby.

We’ll be having meatball subs for lunch a few times this week; Rockford’s not too upset about that. Here’s what we’ll be having for dinner:

Monday: Poppyseed chicken casserole
We were supposed to have this last Thursday, but I think we ended up going out instead.

Tuesday: Sloppy Joes
I believe we’re expecting some Sloppy Joe weather this week.

Wednesday: Festival of Leftovers
Will there still be meatballs?!?! Tune in next week for the exciting conclusion. (I probably/possibly will not actually update you on the meatballs again next week.)

Thursday: Pizza
Well, we’ll be ordering pizza for Pete and Poppy and the in-laws. Rockford and I will probably be eating at Subway before our 19th Wilco concert.

Friday: Out

Did you read that article a few weeks ago, “Friday Night Meatballs: How to change your life with pasta“? It’s about a family who wanted to build a stronger community, so they started invited an assortment of friends over for spaghetti and meatballs every Friday night.

I thought it sounded like a neat idea, so I talked to Rockford about doing our own Friday Night Meatball night. He was dubious.

“Really?” he said. “You want to invite a bunch of people over for dinner? That doesn’t sound like you.”

“What do you mean?” I asked. “It’s leaving the house that I don’t like. I like having people over!”

“So you’re just going to — what? — put up a sign inviting people over?”

And that’s when it dawned on me that he thought I wanted to invite random strangers over for spaghetti and meatballs, possibly by posting signs on nearby light posts or something. That would definitely not be my cup of tea. Once I explained that I’d only be inviting people we actually know, he was fine with it.

I don’t know if we’ll do it every Friday, but we’re definitely doing it this Friday. I think it’ll be fun.

Here’s our menu plan for the rest of the week:

Monday: Breakfast for dinner
I may have my leftover chicken pot pie from last night’s dinner instead, though.

Tuesday: Tacos
This might be the first time we’ve actually celebrated Taco Tuesday.

Wednesday: Cheeseburgers
Pete’s favorite meal!

Thursday: Poppyseed chicken
I’m hoping it’ll be chilly out on Thursday. Poppyseed chicken is excellent year-round, but it’s the very best on a cold day.

Friday: Spaghetti & meatballs

There’s quite a lot of breakfast in our future

This time last week we talked a bit about My Intentions for the week. My goals were to floss more often and to take notes about our homeschool activities, and I successfully did both. Hooray for me (and my teeth).

We have a lot of stuff going on this week. Our meals are somewhere between Simple and Zero Effort when that happens. Thus, the following:

Monday: Omelets
I’ve always loved omelets, and I’ve finally convinced the children that they’re tasty. They still don’t go for anything beyond a cheese omelet, but to be honest that’s my first choice too.

Tuesday: Festival of Frozens
The Festival of Frozens is a celebration of the Miracle of Microwaves.

Wednesday: Probably out
Pete’s first soccer game was rained out, and the make-up date is late Wednesday afternoon. I haven’t entirely decided, but we’ll probably wind up picking up a burger.

Thursday: Pancakes
I’m co-hosting an Arbonne party at a friend’s house. Rockford and the kids will be eating pancakes while I chomp of grapes and cheese.

Friday: Pizza
Most likely homemade.
