How far will $64 go at Harris Teeter?

For the first decade or so of our marriage Rockford and I were forced to be frugal. Then he finished graduate school and moved on to a Real Corporate Job, and the need to clip coupons and buy dented canned goods became increasingly less dire. So I was a bit worried about meeting the demands of the 4 Hats and Frugal $64 challenge. And then I was a lot worried when I saw which store Amiyrah had given me: Harris Teeter. Not traditionally known as a haven for the frugal.

I had to feed a family of four for a week. On $64. At Harris Teeter. Here was my menu plan:

Monday: Sesame noodles with chicken
Tuesday: Potato and chorizo hash
Wednesday: Chicken tortilla soup
Thursday: Curried lentils with chicken and potatoes
Friday: BBQ chicken pizza

I like mine with lettuce (no tomato)

Last night I made soy-scallion flank steak on the grill Rockford and the kids gave me for Mother’s Day. I didn’t marinate it as long as I usually do, and the cherry wood chips I tossed in overpowered the marinade. It was a delicious learning experience.

It was also the first chance I’d had to use the grill, other than seasoning the grates and making some s’mores with it. Most of the kids’ evening activities ended last week, though, which frees my evenings up for grilling a variety of meats in the backyard.

Monday: Cheeseburgers
I didn’t quite get flame-broiled grill marks, but the burgers were the juiciest I’ve made in quite awhile.
Tuesday: Grilled chicken
I generally use my sister-in-law Chloe Poppins’ grilled chicken recipe, which calls for a brief soak in Italian dressing before hitting the grill. Rockford was in charge of the grocery this week, though, and he opted for a sesame marinade. I’m sure it will do the job.
Wednesday: Peanuts? Cracker Jacks?
We might be going to a baseball game.
Thursday: Spaghetti
Can you grill meatballs? I wasn’t really planning to try, but if you tell me it’s possible I might give it a shot.
Friday: Grilled pizza
I have been wanting to grill some pizza for years. My research suggests that the pizza stone I use in the oven will crack at the temperatures I’ll be using in the grill, so I need to get a grill-happy stone. It’s on my to-do list for the week.

I’m hoping to do a low-and-slow smoked something on it soon, but for now I’m still working to learn to keep the temperature steady. Do you have a go-to grill meal? If it’s not a top-secret recipe, share it with me! I’d love to try it out.

Let’s pretend it hasn’t been 20 days since last I posted

I spent a good amount of the weekend making a Samoa Cheesecake from GimmeSomeOven.com for last night’s dessert, and it was delicious. We also did a bit of gardening, folded a lot of laundry and dragged random piles of brush to and fro in the yard. As such, I’m sore today and should probably start doing yoga and stretching before I drag brush piles around again.

Anywho: Here’s what we’re having for dinner this week.

Monday: “Take-Out style Sesame Noodles
Rockford requested these again, and I’m happy to oblige. I ate the leftovers for lunch for days and days the last time we had them. I’m adding some shaved carrots and minced bell pepper this time.
Tuesday: Chicken sausages & mac ‘n’ cheese
I made a hundred million pounds of macaroni and cheese to go with our Easter dinner yesterday, and we still have about 999,000 pounds of it left. The chicken sausages will serve as a lovely accoutrement to the piles of mac & cheese we’ll be eating tomorrow.
Wednesday: Fish
Note to self: Go buy some delightfully seasoned frozen fish.
Thursday: Sloppy Joes
I also made too much Sloppy Joe the last time we had it. I’ll be pulling the extra from the freezer for Thursday night.
Friday: Pizza
Oh yes it’s pizza night! Oh what a night. (Oh what a night.)
