There is no such thing as too many taco nights

Monday: Tacos
Yesterday was our mother-daughter book club meeting, and we had tacos and discussed “Esperanza Rising.” I made ground beef, chicken and a cumin-roasted potato and poblano filling for our vegetarian members. The veggie filling was by far my favorite. I also made an almond flan, which was tasty despite the opinion of all children present.
Tuesday: Tacos Deux
I was going to make spaghetti, but we a lot of taco filling left over. I may make quesadillas, but I’ll probably just reheat everything and call it Taco Night II: Electric Boogaloo.

Wednesday: Undecided
We’ll be celebrating my father-in-law’s birthday, and I don’t know what we’re having yet. He requested a Prinsesstårta, but I am never, ever making one of those again. #ItTraumatizedMeWhenTheMarzipanMelted&Globbed&TheCakeLookedLikeAnAlienBrain.

Thursday: Cheeseburgers
Pete has been campaigning for a cheeseburger night. I have finally acquiesced.

Friday: Popcorn?
We’ll be seeing the new Captain America movie sometime Friday. If we go around dinnertime, we may have popcorn for dinner.

I may not leave the house at all on Friday

We spent the weekend out of town for a soccer tournament, and we were gone for most of the day today for various kid activities. I am worn out, and I have no desire to make dinner tonight. Alas, we don’t have enough cereal to call that dinner, so the ground beef is currently browning for tonight’s tacos.

We have a lot on the schedule every day this week, and there isn’t going to be a chance for an Introversion Break until Friday. I’m going to be channeling Kit Ramsey a lot this week.

The tacos are already nearly done, for what it’s worth.
Tuesday: McAlisters
It’s my week to drive to soccer. We’ll be hitting McAlisters for kids-eat-free night on the way home.

Wednesday: Breakfast for dinner
I know a few weeks ago I said I was going to dedicate Wednesdays to making stuff from Pinterest, but I think I’ve only done it once since then. This week I have a co-op council meeting, and Rockford would rather make pancakes than something from Pinterest.

Thursday: Festival of Frozens
It’s a busy day, and there’s nothing like a frozen dinner to cap off a busy day.

Friday: Pizza

Poppy is not happy about tonight’s menu

Monday: Chicken with mustard cream sauce
It’s Poppy’s night to work with me in the kitchen, and she’s supposed to get to choose what we make. She wanted either tacos (which she won’t even eat) or mac & cheese again, though, so I told her I’d be picking for her this week. We’ll be making this Chicken with Mustard Cream Sauce recipe from Let’s Dish Recipes.
Tuesday: Black bean nachos
Poppy has soccer practice and Rockford’s golf league starts this week, so we’ll all be home for dinner at different times throughout the evening. DIY nachos seemed like a good meal for that sort of evening. We’ll see how it actually works out.

Wednesday: Coconut-lime chicken
I pin recipes on Pinterest pretty often, but I rarely get around to making them. So starting this week we’ll be celebrating Pinterest Wednesdays, on which we make a meal from my I’d Eat That board.

Thursday: Cheeseburgers
Pete decided that he’d like to learn how to make cheeseburgers this week. I’ll probably roast them in the oven.

Friday: Pizza
Weather permitting, we’ll be grilling some BBQ chicken and cheese pizzas this week.
