This is the kids’ last week of summer camp, and I’m supposed to be making sure I have everything ready to start school next week. I scheduled a good bit of other stuff this week, too, though, so that’s been a slower process than it ought to be. And also I seem to have misplaced all of my words and at least a third of my brain capacity. The summer slide: Not just for children.
Anywho, here’s what we’re eating for dinner this week.
- Monday: Breakfast for Dinner
- Rockford had to go out for a work dinner, but he made pancakes before he left. He’s a good guy.
- Tuesday: Parmesan chicken tenders
- This was going to be Crispy Garlic Chicken, but then chicken tenders were on sale. So we’re tenderizing. Or something like that.
- Wednesday: Thai chicken pizza
- Our barbecue chicken pizzas have been great. The taco pizza was just OK. The Thai chicken pizza is going to be phenomenal.
- Thursday: Tacos
- We’re celebrating Rockford’s birthday a day early. I’m giving him the gift of tacos.
- Friday: Chicken salad sandwiches
- Poppy has theater performances on Friday and Saturday, so our weekend schedule is a little wonky. She’ll be dining with the cast, Pete will be with a friend, and Rockford and I will eat sandwiches as we drive people to and fro.
The gift of tacos is always appreciated. Also, chicken salad sounds yummy…especially if it’s on good five-grain bread or something.
Yes, and it has to have a fruit component. Apples will do, but grapes are best.
